Chicken and Dumplings Recipe

One of my favorite meals is Chicken and Dumplings (mostly dumplings). There was a time when I enjoyed eating chicken, pork chops, cube steak, and other meats. I chicken and dumplingscannot bear to eat meat these days.  Something about the texture maybe? I do not know.  I would probably eat chicken and dumplings every day if I could. My appetite has changed so much in the last couple of years. Some days I may eat and other days I do not want anything to eat, but chicken and dumplings seem to do the trick every time.

Chicken and dumplings is a very old Southern dish. I learned to make it years ago; however, my daughter did not like my home-made noodles. She thought they were too thick, but I found a solution and now she loves Chicken and Dumplings; though, not as much as I do. Here is the recipe I use. Try it.

4 Rules for Cooking Chicken and Dumplings:

  1. Dumplings do not belong in a can. I wouldn’t feed my dog canned dumplings, nor would I eat them.
  2. Dumplings are made from a doughy substance. Not a tortilla. There is nothing appealing about cutting tortillas up and boiling them. I know, thousands of people love them.
  3. Dumplings do not need veggies. Where do you see celery, carrots, onions, or any other vegetable in the title ‘Chicken and Dumplings”?
  4. Do not chop up chicken for your dumplings! This is not a casserole, a chicken salad or anything along those lines. If you don’t have time to shred your chicken, then by all means, do it the day before or find someone else to make the darn dumplings. I cannot stand chopped chicken in my dumplings. It messes with the balance of the taste. Yeah, I don’t know if there is such thing but, hey, you know what I mean. And of course, it should go without saying… do not use canned chicken!!!

I have to agree with the 4 rules. I do not want any veggies, tortillas, or can dumplings.

Here is the recipe I use with Mary B’s Dumplings. So good.  You can find Mary B’s at Walmart. Funny story. I wanted to make chicken and dumplings a week ago and I was out of Mary B’s Dumplings. I know I could only find them at the Walmart stores, but I looked in several stores and did not find any. They only had the Asian style noodles which I did not want. I looked online and found two Walmart stores in my area which claimed they had some Mary B’s. I went to the closest store and they had them, although I had to hunt them down in the store. I wanted to be sure I had Mary B’s Dumplings available whenever I wanted to make chicken and dumplings so I purchased 4 packages, and guess what, they were on sale for $1.00 each, instead of $2.94. Praise God for directing me to the right store at the right time.

Ingredients:

  • 2 large bone-in chicken breasts with skin
  • 3 Cups of Water
  • Large can Campbell’s Cream of Chicken Soup
  • Package of Mary B’s Frozen Dumplings (I use 8-10 dumpling strips) and keep others in the freezer.
  • Salt and Pepper to taste

Directions:

Add chicken breasts, water and salt and pepper to large pot. Bring to a boil, cover and simmer chicken for 45 minutes or until done. Remove chicken from pot and place aside to cool (I normally put in the fridge). Add a large can of Campbell’s Cream of Chicken Soup to the broth and stir. Return to boil.

Separate Mary B’s frozen dumpling strips and break into smaller pieces (4 pieces per strip). Add dumplings to boiling broth stirring to prevent sticking. Boil dumplings for 25 minutes, stirring frequently.

While dumplings are boiling, remove skin and bones from your chicken breasts.  Shred your chicken into small bite-sized pieces. After dumplings have been boiling for 25 minutes add the shredded chicken back to the pot and stir to combine ingredients.  Cover and let simmer for an additional 10 to 15 minutes. Serve hot. Add more salt/pepper to taste.  This recipe will feed approximately 4 – 5 people.
